I have been seriously obsessed with Vegan Mexican food lately! These quesadillas are an essential part of my day and a perfect snack/ mid day pick-me-up! Check out my recipe for vegan quesadillas and homemade guac!
- 1 package Daiya cheddar cheese
- Non-gmo corn tortillas
- Sea salt
Heat and oil a frying skillet on medium heat. Then add tortillas onto the pan evenly spaced one at a time. Once it is golden or toasted on one side, flip the tortilla so the same happens to the other side. Sprinkle cheese and salt on the surface of the tortillas and cook till it melts. Then take them off the skillet and fold them in half so they make Quesadillas. Serve with homemade guacamole.
- 1 organic avocado
- 1 organic tomato
- ¼ organic white onion
Chop the onion and tomato into diced pieces and put them in a medium mixing bowl. Then, slice and mash up the avocado and add to the mixture. Stir it around in the bowl so that each ingredient is evenly distributed through the guacamole. Add salt to taste and serve!
