Black Bean Spaghetti

I love trying new healthy things, and I was stumbling through my local health food store when I happened upon this little package of Black bean spaghetti. Vegan, gluten free, organic, high in protein, it looked so amazing! I decided to try it out and could not have been happier. Check out my recipe below! xoxo

This stuff has such a great texture as well as its nutrition content. Such yumminess. I really like this brand, Explore Asian, and think they did an amazing job at making it healthy and very delicious.


1 organic red bell pepper
1-2 organic zucchini 
1 package organic Explore Asian black bean spaghetti
olive oil
sea salt
vegan cheese (or Parmesan)

In a large pot, bring 8 cups of water to a boil. Add the spaghetti and simmer for 7-8 minutes with a lid covering. When cooked, drain the water from the pasta and serve.

Wash and slice the zucchini and bell peppers thinly. Put oil in a medium or large skillet on medium heat and cook vegetables for about 7 minutes, or until soft.

Add the spaghetti into small bowls and add the vegetables on top. Then, add olive oil, sea salt, and cheese to the top, and serve.
These little bowls were a very nice gift from a dear friend (thank you!) and I just love how perfectly they fit with this dish. They made it taste better! Especially using chopsticks was very fun.
Hint, this goes down very well with some lemonade!
