Gluten, dairy, and sugar free Banana muffins

Muffins are so wonderful. An easy breakfast or snack, and the perfect baked good for tea time!
I cannot believe how easy it is to make gluten free and vegan muffins-- much easier than cookies. They are literally my favorite things to bake and to eat!

Here's my recipe for gluten, dairy, sugar free banana muffins!!!
1 cup gf baking flower
½ cup gf oat flour
¾ cup coconut sugar
½ tablespoon baking soda
½ tablespoon baking powder
¾ cup rice/coconut milk
½ cup coconut oil (melted)
1 ripe organic banana (mashed)
1 organic egg
(walnuts optional)

Preheat oven to 350 degrees <3
Mix first all of the dry ingredients (flowers, powder, coconut sugar)in a medium mixing bowl.
Then, mash your organic banana in a large mixing bowl. There, combine the wet ingredients and whisk together. Now, add in the dry ingredients from the other bowl into the large one and stir it all together. 

Spray a muffin pan with coconut oil spray, and then spoon in the batter till each cup is almost full. 
Put muffins in the oven for about 25-30 mins and keep checking after 20 mins with a fork or toothpick to see if it comes out clean.
 When your muffins are all done, take them out of the oven and let them cool for a little. Then you can put them decoratively on a plate surrounded by little pink flowers from your garden! Or just eat them… xoxo
