Mini Cakes

Gluten free, dairy free pettitfors!
Let's say that I ADORE pettitfours. Little mini cakes that are just perfect for an Alice in Wonderland tea party. They don't make many that are Gluten free, Dairy free, and sugar free, but I managed to find a way around that!

Now these are just cake mix made into smaller versions of cake, but it has the same adorable, mini taste!
This is an amazing cupcake or mini muffin pan that shapes the cakes just like flowers when they come out. Love it!
ingredients-- 2 organic eggs (or vegan substitute), 1/2 cup of coconut oil, 1-1/2 cup of water, 1 package of Pamela's Chocolate Cake Mix

instructions-- Preheat oven to 350. First, beat eggs in a large electric or regular mixing bowl and melt coconut oil. Add in the water and mix well all together. Then, slowly add the mix (all of it), stirring well as you go. 
When all of the clumps are gone, spoon the mix out into little muffin pans, or cupcake holders, or just a cake pan for one big treat. 

Bake for about 20 mins, or till a fork comes out clean. Let cool for about 10 mins or less, and then flip cakes out onto a plate or pan. Icing optional, and if you can find a gluten free dairy free and sugar free one, I emplore you to slap it on there! But if not, it is just as delightful, and lighter, without it.
