Guacamole for GERD

My incredibly healthy mother has been living with GERD-- Gastroesophageal reflux disease-- which means she can't eat anything acidic. Which is a lot of things... But the top of the list is no tomatoes, no garlic, and no onions. So every Mexican dish ever is out! And a big guacamole lover, that has been very sad for her.
Sooo, here is my recipe for all you GERDies out there for safe guac!

A 3 step recipe, it is simple and not dull. Maybe not as kicky as regular guacamole, but I hope you enjoy it just as much.
  • 2-3 organic avocados 
  • 1 stick of Parmesan cheese
  • sea salt (pink himalayan) 
  • olive oil
Mash the avocados in a small-medium bowl. Add a tablespoon of olive oil in and keep mixing. Then sprinkle in sea salt to taste. Once distributed where you want it (plates or a bowl), shred Parmesan on top. And Viola!
A perfect snack for game day.
