Perfect Cookies

One of the many things in life that I cannot live without are cookies. And they go so fast, that I find myself making at least three trips to the local health food store a week! So instead of pining for someone else's product, I decided to make a little bit of my own. I use carob chips (vegan) instead of chocolate (but if you can find dairy and sugar free chocolate chips go for it!) and I can't even tell the difference! I am very proud of this recipe, and plan on making it every time I get a cookie crave! But hide them from your friends, or else you will have to make a few more trips for ingredients!!!

  • 1/4 cup coconut flour
  • 3/4 cup organic brown rice flour
  • 1/4 cup coconut sugar
  • 1 organic cage free egg
  • 1/2 cup coconut oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 cup vegan chocolate chips
  • 1/4 cup chopped organic walnuts
preheat oven 350 degrees
In a medium mixing bowl, combine flour and baking soda/powder. In a small saucepan, melt the coconut butter (or microwave…) and combine with the two eggs-- beaten-- sugar, and vanilla. Then, add the "wet" ingredients to your flour and mix. Now add your carob chips and walnuts and mix in until evenly spread (you can add more or less to your preference).
Oil a baking sheet with coconut oil and spoon out balls of dough, rolling them and shaping with your hands-- be sure they are clean! 
Bake for about 12 minutes, until golden brown around the edges. Take out and cool for about 10 minutes. 
There you go! all ready for some super yummy and healthy (though they don't taste like it!) cookies! <3
