Magical Blueberry Muffins

I LOVE muffins…
Seriously, if I was able to choose the only food I could eat for forever, it would be muffins. But since changing my diet, those dreams have been dashed. I have tried every brand, but they all seem to have too much sugar, or not the right texture, or something… Soooo, I am thrilled to share with you all my very own from scratch gluten free, dairy free, sugar free blueberry muffin recipe! 
  • 1 1/2 cups organic brown rice flour
  • 1/2 tablespoon baking powder
  • 1/2 tablespoon baking soda 
  • Sprinkle of pink Himalayan sea salt
  •  A quick splash of organic ground cinnamon
  • 3/4 cup organic unsweetened rice/almond/coconut milk
  • 1 organic cage free egg, beaten
  • 1/2 cup melted coconut spread/butter/oil
  • 1 1/2 cup freshly washed organic blueberries (or just one small carton)
  • 3/4 cup organic coconut sugar

Preheat oven 375
Combine all of your “wet” ingredients (egg, butter, milk) in a medium sized mixing bowl and stir. Then, add the flour, sugar, powders, spices and etc. Then go ahead and add in your blueberries. Mix this all together so that it is nice and smooth. 
Fill  into small or medium unbleached muffin or cupcake holders, and bake in a muffin pan in the oven for 20 minutes.
Take out of oven, and set on cooling rack for about 10-15 minutes. 
 I am so happy at how beautifully these turned out! Not too sweet, but sweet, not too soft, but soft! Yummmmm! Definitely the perfect breakfast treat for Mother's Day! Have a beautiful day everyone! And treat yourselves this weekend <3
