Carrot Lemon Bars

This recipe is the perfect treat for spring. Deliciously zesty hints of lemon, contrasted with the refreshing carrot taste. A definite crowd pleaser, and very easy to make! You can even add a honey topping for extra sweetness! The bars are just the right size, not too much like a cake. And using coconut flour instead of all brown rice gives it a very fluffy texture. Serve this at any gathering this season, but be sure to watch out for hungry bunnies trying to sneak a piece!

·      1 cup organic coconut flour (half in half with brown rice flour for more texture)
·      1 cup organic coconut sugar
·      1/3 cup earth balance or goat butter (melted)
·      3 organic large eggs
·      1 tsp vanilla extract
·      1 tsp baking powder
·      1 tsp organic ground cinnamon
·      1 tbsp. organic lemon zest (just grate one lemon over bowl)
·      1/2½ cup grated organic carrots (one carrot)
·      1/4¼ cup lemon juice
Set the oven to 350 degrees. In a medium mixing bowl, combine ingredients and stir until it becomes smooth and orangey brown. Oil well a medium brownie sheet and fill in the batter. Cook in the oven for 15 minutes and until you stick a toothpick in the middle and it comes out clean.
Let cool for 15 minutes, then cut into squares and serve!
